🍲 Slow Cooker Potato Broccoli Cheese Soup 🥦🧀

List of ingredients:

4 big potatoes, peeled and cut into small pieces.
2 cups of chopped broccoli.
1 little onion, chopped into small pieces.
2 pieces of garlic, finely chopped
4 cups of vegetable broth or chicken broth.
1 and a half cups of grated strong cheddar cheese
1 cup of thick cream (or half and half)
1 tablespoon of butter
1 teaspoon of dried thyme
1 small spoon of paprika
Add salt and pepper according to your preference.
Additional grated cheddar cheese (for sprinkling on top)
Fresh parsley or green onions (to decorate)

Guidelines:

Get the ingredients ready. Put the chopped potatoes, broccoli, garlic, onion, and vegetable broth in your slow cooker.

Time of year. Add the thyme, paprika, salt, and pepper. Place a lid on the pot and cook on low heat for 6-7 hours or on high heat for 3-4 hours, until the potatoes are soft.

Mix (if desired): To make your soup smoother, use a hand blender to blend some of it directly in the pot. If you like it thicker, you can skip this part.

Include cream and cheese. Add the thick cream and grated cheddar cheese. Let it cook for another 20-30 minutes on low heat until the cheese is completely melted and the soup is creamy.

Try and modify as needed. Try the soup and add more salt, pepper, or cheese if necessary.

Wait on tables. Put the soup in bowls and add more grated cheddar cheese, fresh parsley, or green onions for a colorful touch.
