🍲 Creamy Soup with Parmesan Cheese and Italian Sausage 🧀🌿

 

Ingredients:

1 pound of sweet Italian sausage
2 tablespoons of olive oil
1 big onion, chopped 3 garlic cloves, finely chopped
6 cups of chicken broth 1 cup of heavy cream
1 and a half cups of small tube-shaped pasta.
1 teaspoon of dried oregano
1 teaspoon of dried basil
1/2 teaspoon of red pepper flakes (if desired)
Add salt and pepper as desired.
4 cups of chopped fresh spinach
1 cup of shredded Parmesan cheese, and extra for topping.
Fresh parsley, finely chopped to sprinkle on top.

INSTRUCTIONS:

Make the sausage. In a big pot, warm the olive oil on medium heat. Put the tasty Italian sausage in the pan and cook it until it turns brown, using a wooden spoon to break it into smaller pieces. Take out the sausage from the pot and place it to the side.
Cook the chopped onion in the same pot until it becomes soft, for approximately 5 minutes. Put the chopped garlic in the pan and cook for 1-2 more minutes until it smells good.
Include the broth and herbs. Add the chicken broth and heat until it starts boiling. Add the dried oregano, dried basil, red pepper flakes (if desired), salt, and pepper.
Make the Pasta: Put the ditalini pasta in the pot and cook it until it is firm to the bite, as directed on the package.
Include the cream and spinach. Lower the temperature and mix in the thick cream. Add the roughly cut fresh spinach and cook until it wilts.
Put the cooked sausage back in the pot and mix it well.
Sprinkle some Parmesan cheese on top. Add 1 cup of grated Parmesan cheese and mix until it melts and blends well.
Wait on people. Put the soup in bowls and add more Parmesan cheese and fresh parsley on top.
