A delicious soup based on the famous Philly cheesesteak sandwich. A delicious soup with tender beef, vegetables, and a creamy, cheesy broth that is comforting and fulfilling.
List of ingredients:
1 pound of sirloin steak cut into thin slices
1 onion, chopped
1 green pepper, chopped
8 ounces of sliced baby portobello mushrooms.
4 cups of beef broth
1 cup of thick cream
1 cup of grated provolone cheese (or mozzarella)
1 tablespoon of olive oil
1 teaspoon of powdered garlic
1 teaspoon of dried thyme
Add salt and pepper according to your preference.
2 tablespoons of butter
2 tablespoons of flour (if desired, to make thicker)
Fresh parsley, finely chopped (to sprinkle on top)
Crusty bread or rolls (if desired, to serve)
Steps:
Cook the vegetables in a pan with a little oil. Warm the olive oil in a big pot or a Dutch oven on medium heat. Put the chopped onion, green pepper, and sliced mushrooms. Cook for around 5 to 7 minutes until the vegetables are soft and the mushrooms let out their liquid.
Prepare the steak: Move the vegetables to one side of the pot and put in the thinly sliced sirloin steak. Cook the steak for 3-4 minutes until it is brown on all sides. Add garlic powder, dried thyme, salt, and pepper for flavor.
Prepare the broth: Put the beef broth in the pot and heat until it starts to bubble. Let it cook for around 10 minutes so the flavors can mix well.
Make the soup thicker (if desired). If you want a thicker soup, melt the butter in a different pan on medium heat. Mix the flour and cook for 1-2 minutes to create a roux. Slowly pour some of the hot soup broth into the mixture, stirring with a whisk to avoid clumps. Put the mix back into the soup and mix well. Let the soup cook a little longer to make it thicker.
Put the cream and cheese on top. Add the thick cream and grated provolone cheese. Keep cooking on low heat, stirring from time to time, until the cheese melts and the soup becomes creamy.
Provide service. Try the soup and add salt and pepper to taste, if necessary. Put the soup in bowls, add fresh parsley on top, and serve with crusty bread or rolls to dip.
