A tasty soup that mixes delicious kielbasa with tangy sauerkraut, great for a cozy meal. This simple soup is packed with strong flavors and will keep you warm on a chilly day.
List of ingredients:
Cut 1 pound of kielbasa into slices.
1 onion, chopped
2 pieces of garlic, finely chopped
32 ounces of chicken broth or vegetable broth.
1 can of sauerkraut, 14.5 ounces, drained and washed.
2 big potatoes, peeled and cut into small pieces.
1 carrot, cut into small pieces.
1 teaspoon of dried thyme
1 teaspoon of caraway seeds (if desired, for extra flavor)
Add salt and pepper according to your preference.
1 tablespoon of olive oil
Fresh parsley, finely chopped (to decorate)
Steps:
Cook the Kielbasa in a pan with a little oil.
Warm the olive oil in a big pot on medium heat. Put the cut kielbasa in the pan and cook for around 5 minutes, until it turns slightly brown. Take out the sausage from the pot and place it to the side.
Cook the fragrant ingredients in a pan.
In the same pot, put the chopped onion and cook for 3-4 minutes until it becomes soft. Put the chopped garlic in the pan and cook for one more minute until it smells good.
Include the soup and vegetables.
Add the chicken broth and put in the chopped potatoes, carrots, sauerkraut, dried thyme, and caraway seeds (if desired). Mix together.
Cook the soup slowly.
Heat the mixture until it boils, then lower the heat and let it cook gently for 20-25 minutes, or until the potatoes are soft.
Include the Kielbasa sausage:
Put the browned sausage back in the pot and let it simmer for 5-10 more minutes so the flavors mix well.
Prepare and enjoy:
Try the soup and add salt and pepper to taste, if necessary. Put the soup in bowls, add fresh parsley on top, and serve while hot.
