Broccoli and cheese fritters

 

 

★Ingredients: List of items needed.

 

 

For the Beignet Dough:

 

1/2 cup of shredded Parmesan cheese

 

1/2 cup of grated cheddar cheese

 

1 cup of regular flour

 

2 teaspoons of baking powder

 

 

Half a teaspoon of salt.

 

1/4 teaspoon of black pepper

 

1/2 cup of milk

 

1 big egg

 

2 tablespoons of melted butter

 

 

For the Broccoli Stuffing:

 

1 cup of small pieces of broccoli (cooked and cooled down)

 

1/4 cup of onion, chopped into small pieces.

 

1/2 cup of grated mozzarella cheese

 

1/4 cup of shredded Parmesan cheese

 

 

Add salt and pepper according to your preference.

Guidelines

 

Make the broccoli filling.

In a bowl, combine the chopped broccoli, onion, mozzarella cheese, and Parmesan cheese. Add salt and pepper. Put aside.

Prepare the beignet dough.

In a big bowl, mix the flour, Parmesan cheese, cheddar cheese, baking powder, salt, and black pepper using a whisk.

In a different bowl, mix together the milk, egg, and melted butter.

Slowly mix the liquid ingredients into the dry ones until they are just mixed together.

Add the broccoli mixture.

Carefully mix the broccoli into the batter until it is evenly spread throughout.

Warm up the oil.

In a deep fryer or a large pot, warm up vegetable oil to 350°F (175°C). Make sure there is plenty of oil to cover the beignets completely.

Cook the beignets in hot oil.

Use a spoon or a small ice cream scoop to place small amounts of the batter into the hot oil. Cook small amounts at a time, making sure not to put too much in the pot at once.

Cook for 2-3 minutes on each side until they are golden and crispy. Take out using a spoon with holes and let the excess liquid drip on paper towels.
