Ingredients

▢0.5 pounds of ground beef
▢Kosher salt to taste
▢Ground pepper to taste
▢2/3 cup of beef stock
▢1/2 cup of Gouda cheese finely shredded
▢1 1/4 cups of Monterey Jack cheese finely shredded
▢2/3 cup of black beans drained and thoroughly rinsed
▢1/4 cup of red onion finely diced
▢8 ounces of chopped tomatoes canned, drained
▢1/4 cup of fresh cilantro finely chopped
▢Corn chips for serving (optional)

Instructions

Preparation of Ground Beef: Utilize a large skillet and set it over a medium heat source. Introduce the ground beef into the skillet. As it cooks, use a wooden spoon to fragment the beef into smaller pieces, ensuring uniform cooking. This process should take approximately 3-4 minutes.

Deglazing and Reduction: Following the browning of the beef, add the beef stock to the skillet. Employ a spatula to scrape the caramelized particles from the bottom of the pan, thereby incorporating them back into the liquid. Continue to heat the mixture until the liquid volume has reduced by half, a process that should take an additional 3-4 minutes.
Incorporation of Cheeses: Introduce both types of shredded cheese to the skillet, stirring continuously. The heat should be sufficient to melt the cheese, integrating it smoothly with the beef and broth, which should take about 1-2 minutes.
Addition of Vegetables and Beans: Add the black beans, diced red onions, and chopped tomatoes to the cheese and beef mixture. Stir thoroughly to ensure all components are evenly distributed. Allow the mixture to simmer for 3-4 minutes, enabling the flavors to meld.
Final Seasoning and Garnish: Remove the skillet from the heat source. Incorporate the chopped cilantro, mixing it well with the other ingredients.
Serving: Transfer the prepared Cowboy Queso Dip to a serving dish and present it alongside corn chips for dipping. Serve immediately while warm to best enjoy its flavors.
