1/2 pound of sausage meat
1 little onion, diced
8 ounces of sliced mushrooms.
2 garlic cloves, finely chopped
4 cups of young spinach leaves
5 cups of chicken broth with low sodium.
5 lasagna noodles that are broken.
1 teaspoon of dried oregano
1/2 teaspoon of dried basil.
3 tablespoons of butter
3 tablespoons of flour
1 cup of milk
1 cup of grated Parmesan cheese
Directions
Cook sausage in a big pot on medium heat. Put onion and mushrooms in the pan and cook for 5-6 minutes on medium-low heat.
Put garlic and spinach in the pan and cook for 1 minute, stirring constantly.
Include chicken broth and let it cook gently for 5 minutes.
Add pieces of lasagna noodles that are broken, oregano, and basil, and heat until it starts to boil gently.
Cook for 10 to 12 minutes or until the noodles are soft.
Meanwhile, in a pan over low-medium heat, melt some butter. Mix in the flour and keep cooking for 1 minute, stirring all the time. The mixture of butter and flour should be boiling.
Gradually stir in milk until the mixture becomes smooth and thick, which should take around 3-5 minutes.
Stop the heat and gently mix in Parmesan cheese. If the cheese is not melting, put it on low heat and stir it continuously. Once the Parmesan cheese is completely melted and the mixture is smooth, gradually pour it into the soup mixture while whisking.
