Ingredients:

4 pieces of bacon, cut into small pieces.
2 tablespoons of butter
1 onion of medium size, chopped
3 pieces of minced garlic
3 big brown potatoes, peeled and cut into small pieces.
4 cups of broccoli pieces
4 cups of chicken or vegetable broth
2 cups of milk (or half-and-half for a creamier option)
1 cup of grated cheddar cheese
Add salt and pepper according to your preference.
1 teaspoon of smoked paprika (if desired)

Directions:

Make the bacon. In a big pot, cook the cut bacon on medium heat until it is crispy. Take out the bacon using a spoon with holes and put it to the side, keeping the bacon grease in the pot.

Cook the aromatic ingredients in the pot by adding butter to the bacon fat. After the onion has melted, cook it in a pan until it becomes soft, which should take around 5 minutes. Put the chopped garlic in the pan and cook for one more minute until it smells good.

Prepare the potatoes: Put the chopped potatoes in the pot and add chicken or vegetable broth. Heat the soup until it boils. Then, lower the heat and let it cook gently for 10-15 minutes, or until the potatoes are soft.

Put the broccoli in the pot. Cook the broccoli for 5-7 more minutes until it is soft but still green.

Mix the soup: Use a hand blender or pour the soup into a regular blender in small amounts, blend until it is as smooth as you like. You can keep it chunky for a textured soup or blend it until smooth for a creamy soup.

Add milk and cheese: Mix in the milk (or half-and-half) and grated cheddar cheese, stirring until the cheese melts and the soup becomes creamy. If desired, mix in the sour cream to make it richer. Add salt, pepper, and smoked paprika to the soup according to your preference.

Serve the soup in bowls and add crispy bacon, more shredded cheese, green onions, and a spoonful of sour cream if you like.
