Ingredients

  • 2 tbsp unsalted butter
  • 1 tbsp olive oil
  • 1 small onion, finely chopped
  • 2 garlic cloves, minced
  • 1 lb fresh mushrooms (white, brown, or a mix), sliced
  • 2 tbsp all-purpose flour
  • 4 cups vegetable or chicken broth
  • 1 cup heavy cream or half-and-half
  • 1 tsp fresh thyme leaves (or ½ tsp dried thyme)
  • Salt and pepper, to taste
  • Fresh parsley, chopped (optional, for garnish)

Instructions

1. Sauté the Aromatics

  1. In a large pot, heat the butter and olive oil over medium heat until melted.
  2. Add the chopped onion and minced garlic. Cook for 3–4 minutes, stirring occasionally, until the onion is soft and translucent.

2. Cook the Mushrooms

  1. Add the sliced mushrooms to the pot.
  2. Cook for 5–7 minutes, stirring occasionally, until the mushrooms are golden brown and have released their juices.

3. Add Flour

  1. Sprinkle the flour over the mushrooms and stir to coat them evenly.
  2. Cook for an additional 1–2 minutes to remove the raw flour taste.

4. Add Broth and Simmer

  1. Gradually pour in the vegetable or chicken broth while stirring continuously to avoid lumps.
  2. Add the thyme and bring the soup to a gentle simmer.
  3. Let it cook for 10–15 minutes, allowing the flavors to meld together.

5. Add Cream and Season

  1. Stir in the heavy cream or half-and-half and let the soup cook for an additional 5 minutes.
  2. Season with salt and pepper to taste.

6. Blend (Optional)

  • For a silky texture: Use an immersion blender to blend the soup until smooth.
  • For a chunkier texture: Leave the soup as is or partially blend for a mix of textures.

7. Serve and Garnish

  1. Ladle the soup into bowls and garnish with chopped fresh parsley, if desired.
  2. Serve warm with crusty bread or a side salad for a complete meal.

Tips for Success

  • Mushroom Variety: Combine white, cremini, and shiitake mushrooms for a deeper flavor.
  • Lighter Option: Use half-and-half instead of cream for a lighter version.
  • Flavor Boost: Add a splash of dry white wine while cooking the mushrooms for an extra layer of flavor.
