Marry Me Chicken

Ingredients:

  • 4 boneless, skinless chicken breasts (or thighs)

  • Salt & pepper

  • 2 tbsp olive oil

  • 3–4 cloves garlic, minced

  • 1 cup chicken broth

  • ¾ cup heavy cream

  • ½ cup grated Parmesan cheese

  • ½ cup sun-dried tomatoes, chopped

  • 1 tsp chili flakes (optional but 🔥)

  • 1 tsp dried oregano

  • ½ tsp thyme

  • Fresh basil or parsley for garnish


Instructions:

  1. Season & Sear the Chicken:

    • Season chicken with salt and pepper.

    • Heat olive oil in a large skillet over medium-high heat.

    • Sear chicken until golden on both sides (about 4–5 mins per side). Remove and set aside.

  2. Make the Sauce:

    • In the same pan, add garlic and sauté for about 30 seconds.

    • Pour in chicken broth and scrape up all the browned bits.

    • Stir in heavy cream, Parmesan, sun-dried tomatoes, chili flakes, oregano, and thyme. Let it simmer a few minutes to thicken.

  3. Bring It All Together:

    • Return the chicken to the skillet and spoon sauce over it.

    • Simmer for 10–15 minutes until the chicken is fully cooked and tender.

  4. Serve:

    • Top with fresh basil or parsley.

    • Serve over pasta, mashed potatoes, rice, or with crusty bread.


🔥 Pro Tips:

  • Add a splash of white wine to the sauce for a little extra depth.

  • Want it extra creamy? Add a bit more Parmesan or a spoon of cream cheese.

  • You can finish it off in the oven too (350°F for 10–15 mins).
