You will need: 1 pound of ground beef.
1/2 cup of chopped onion…
1 packet of taco seasoning mix
2 cups of grated cheddar cheese
1 can of mashed beans (they are easier to spread if you heat them in the microwave).
1 cup of cooked rice (I used Minute Rice)
1 can of Mexican-style mixed corn (without liquid) will be used. approximately half of a can
4-5 big wheat tortillas
8 ounces of chunky salsa, either mild or hot, depending on your preference.
How to create it:
Apply cooking spray to a round cake pan or casserole dish.
Cook minced beef and onion, then remove excess fat.
Add spices for tacos and cook following the instructions on the package.
Place one tortilla at the bottom of the baking dish. Spread one-third of the beans on top of it, then add one-third of the meat and sprinkle some cheese on top.
Use two tortillas, half of the rice, half of the salsa, half of the corn, and half of the cheese.
Place a third layer of tortilla, then add one-third beans, one-third meat, and cheese.
Tortilla with 4 layers. Beans, meat, corn, rice, salsa, and cheese.
Cook covered with aluminum foil in the oven at 350 degrees for approximately 40 minutes. Then, remove the foil and bake for an additional 10-15 minutes. Wait for 5 minutes before cutting. After baking, add sour cream, chopped onion, and shredded lettuce on top if you like.
