1 cup of oatmeal
2 huevos
2 soft bananas, crushed
1/2 cup of milk or a milk substitute of your choosing
1 teaspoon of baking powder
1 teaspoon of vanilla extract
A little bit of salt
Use cooking oil or butter to coat the pan.
Directions
Make the batter: Put the mashed bananas, oats, eggs, milk, baking powder, vanilla, and a little salt in a blender. Mix until the mixture is smooth, letting the oats break down and thicken the batter slightly. Allow it to rest for a few minutes to become thicker.
Warm up the pan. Put a pan that doesn’t stick on the stove over medium heat. Put a little bit of oil or butter in the pan to lightly coat it.
Make the pancakes. Put around 1/4 cup of batter on the pan for each pancake. Smooth out the batter carefully with a spoon if necessary. Cook for 2-3 minutes on one side until bubbles appear on top. Turn the pancake over and cook for 1-2 more minutes until it is golden brown on the other side.
Wait on tables. Take it out of the pan and put it on a plate. Keep doing it until you have used all the batter. Enjoy it warm with toppings such as honey, maple syrup, fresh fruit, or a bit of cinnamon.
