List of ingredients:
For the Seafood Soup:
1/2 pound of shrimp, with shells and veins removed.
1/2 pound of crab meat, preferably in large pieces.
2 tablespoons of butter
1 onion, cut into small pieces.
1 carrot, cut into small pieces.
2 pieces of celery, cut into small pieces
3 pieces of garlic, chopped.
1/4 cup of tomato paste
3 cups of broth made from seafood or fish.
1 cup of thick cream
1 small spoon of paprika
1 teaspoon of dried thyme
Add salt and pepper as desired.
Fresh parsley, finely chopped, to decorate
To make thicker:
2 tablespoons of regular flour
Directions:
Get the seafood ready.
Boil the shrimp in a pot of hot water for 2-3 minutes until they turn pink and not see-through. Take out, let it cool down, and cut into pieces without precision. Put aside.
Cook Vegetables in a Pan:
In a big pot, heat butter on medium heat until it melts. Include onion, carrot, celery, and garlic. Cook the vegetables until they are soft, for about 5 to 7 minutes.
Enhance the taste:
Add tomato paste, paprika, and thyme and mix well. Continue cooking for 2 more minutes.
Prepare the Bisque:
Put some flour on the vegetables and mix them together. Slowly pour in fish broth while stirring constantly to avoid clumps. Heat the mixture until it starts to bubble gently. Then, lower the heat and let it simmer softly for 20 minutes.
Include seafood and cream.
Put the diced shrimp and crab meat into the pot. Add the thick cream and mix well. Cook for 5 more minutes, or until everything is hot. Add salt and pepper to taste.
Wait on tables.
Put the soup in bowls and sprinkle with chopped parsley.
