Creamy Sausage and Potato Soup

Ingredients
- 1 onion, finely chopped
- 3 garlic cloves, minced
- 4 cups (1 liter) chicken broth
- 1 lb (450 g) Italian sausage meat (or ground beef seasoned with Italian herbs)
- 4 slices turkey bacon, chopped
- 4 medium potatoes, thinly sliced or cubed
- 2 cups (480 ml) heavy cream or milk
- 2 cups (100 g) chopped kale or spinach
- ½ tsp crushed red pepper flakes (optional)
- Salt and pepper, to taste
- Fresh parsley, finely chopped (for garnish)
Instructions
1. Cook the Sausage
- Heat a large pot over medium heat.
- Add the Italian sausage (or seasoned ground beef) and cook until browned, breaking it into small pieces as it cooks.
- Remove the sausage from the pot and set it aside.
2. Cook the Turkey Bacon and Aromatics
- In the same pot, cook the turkey bacon until crispy. Remove and set aside.
- Add the chopped onion to the pot and sauté for 5 minutes, or until softened.
- Stir in the minced garlic and cook for 1 minute, until fragrant.
3. Add Potatoes and Broth
- Stir in the potatoes and pour in the chicken broth.
- Bring the mixture to a boil, then reduce the heat to low.
- Simmer for 15–20 minutes, or until the potatoes are tender.
4. Create a Creamy Texture
- Add the heavy cream or milk to the pot and stir to combine.
- Return the cooked sausage and turkey bacon to the soup.
- Let the soup simmer for 5 more minutes to meld the flavors.
5. Add Kale or Spinach
- Stir in the chopped kale or spinach.
- Cook for 2–3 minutes, or until the greens wilt.
6. Season and Serve
- Sprinkle in crushed red pepper flakes, if desired, and season with salt and pepper to taste.
- Ladle the soup into bowls and garnish with fresh parsley.
- Serve hot with crusty bread or breadsticks for a complete meal.
