Shepherd’s Pie Soup

All the hearty flavors of classic Shepherd’s Pie transformed into a comforting, one-pot soup!


Ingredients

For the Soup Base:

  • 2 tbsp olive oil
  • 1 medium onion, chopped
  • 2 garlic cloves, minced
  • 1 lb ground beef or ground lamb
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1 cup frozen peas
  • 1 cup corn kernels (fresh or frozen)
  • 4 cups beef broth
  • 2 tbsp tomato paste
  • 1 tsp Worcestershire sauce
  • 1 tsp fresh thyme (or ½ tsp dried thyme)
  • Salt and black pepper, to taste
  • ½ cup heavy cream
  • 4 medium potatoes, peeled and diced

Optional Mashed Potato Topping:

  • 2 cups mashed potatoes (prepared or store-bought)
  • 2 tbsp butter
  • ¼ cup milk or cream
  • Salt and black pepper, to taste

For Garnish:

  • Fresh parsley, finely chopped

Instructions

1. Cook the Meat

  1. Heat 1 tbsp olive oil in a large pot over medium heat.
  2. Add the ground beef or lamb, breaking it into small pieces with a spoon. Cook until browned, about 5–7 minutes.
  3. Drain any excess fat and set the cooked meat aside.

2. Sauté the Vegetables

  1. In the same pot, heat the remaining 1 tbsp olive oil.
  2. Add the onion, carrots, and celery, and sauté for 5 minutes until softened.
  3. Stir in the minced garlic and cook for an additional 1 minute, until fragrant.

3. Build the Broth

  1. Stir in the tomato paste, Worcestershire sauce, thyme, salt, and pepper.
  2. Pour in the beef broth and bring the mixture to a gentle boil.

4. Add Potatoes and Meat

  1. Add the diced potatoes and return the cooked meat to the pot.
  2. Reduce the heat to low, cover, and simmer for 20–25 minutes until the potatoes are tender.

5. Finish with Cream and Veggies

  1. Stir in the heavy cream, peas, and corn.
  2. Cook for another 5 minutes to warm through.
  3. Taste and adjust the seasoning as needed.

6. Optional Mashed Potato Topping

  1. For a Shepherd’s Pie-inspired touch, warm the mashed potatoes with butter, milk, salt, and pepper in a small pot.
  2. Spoon a dollop of mashed potatoes on top of each bowl of soup just before serving.

7. Serve and Garnish

  1. Ladle the soup into bowls and sprinkle with fresh parsley.
  2. If desired, add the mashed potato topping for a creamy, hearty finish.
