List of ingredients:
1 egg
2 pieces of garlic, finely chopped
1 teaspoon of dried oregano
1 pound of ground beef or ground turkey
1/3 cup of bread crumbs
1/4 cup of shredded Parmesan cheese
1 teaspoon of dried basil

About Soup:
1 tablespoon of olive oil
1 big onion, chopped
2 carrots, cut into small pieces.
2 pieces of celery, chopped
3 pieces of garlic, finely chopped
6 cups of chicken or beef broth
1 can of diced tomatoes (14.5 oz), with the liquid in the can.
1/2 cup of uncooked long-grain rice
1 teaspoon of dried thyme
1 teaspoon of dried parsley
Add salt and pepper according to your preference.
Fresh parsley, finely chopped (to sprinkle on top)
Instructions:
Make the meatballs:
In a big bowl, mix together the meat, breadcrumbs, cheese, egg, garlic, herbs, salt, and pepper. Stir until everything is mixed together.
Shape the mixture into small balls, approximately 1 inch in size, and leave them to the side.
Cook the meatballs until they are browned.
In a big pot or a large cooking pot, warm the olive oil on medium-high heat. Put the meatballs in small groups and cook them until they are brown on all sides, which should take around 5 minutes. Take the meatballs out of the pot and place them to the side.
Cook the vegetables in a pan with a little oil.
In the same pot, put the chopped onion, carrots, and celery. Cook over medium heat for approximately 5 minutes, or until the vegetables are tender.
Put the chopped garlic in the pan and cook for one more minute, stirring all the time.
Cook the soup slowly.
Add the broth and put in the chopped tomatoes, rice, thyme, and parsley. Mix thoroughly.
Put the meatballs back in the pot and heat the soup until it boils. When the water is boiling, lower the heat, cover the pot, and let it cook gently for 20-25 minutes until the rice is ready and the flavors have mixed well.
Prepare and serve.
Try the food and add salt and pepper to your liking.
Serve the dish hot and sprinkle fresh parsley on top.
