Ingredients

  • 4 medium russet potatoes , diced into bite-sized cubes
  • 2 tablespoons olive oil

  • Salt and freshly ground black pepper, to taste

  • 1/4 cup sour cream
  • 1/4 cup guacamole or sliced avocado

Instructions

  1. Remove the potatoes from the oven and let them cool slightly.
  2. Top with diced tomatoes , black olives , green onions , and any optional protein like cooked ground beef, chicken, or black beans.
  3. Dollop with sour cream and guacamole (or sliced avocado) for extra creaminess.
  4. Garnish with fresh cilantro before serving.
