Tasty and Nutritious Cabbage Soup: A Great Meal for Feeling Cozy

2 tablespoons of olive oil
1 onion, chopped into small pieces

1 leaf from the bay tree

1 zucchini, cut into small pieces (if desired)
1 cup of green beans, with the ends removed and cut into small pieces, about 1 inch long.

Directions:

Cook the fragrant ingredients: In a big pot, warm the olive oil on medium heat. Put the chopped onion in the pan and cook until it becomes soft, which should take around 4-5 minutes. Put the garlic, carrots, and celery in the pan and cook for 5 more minutes until the vegetables start to get soft and the garlic smells good.

Put the cabbage in: Mix in the chopped cabbage and cook for around 3 minutes until it starts to soften a bit.

Add broth and spices: Pour the vegetable broth into the pot, then add the chopped tomatoes, thyme, basil, and bay leaf. Heat the soup until it boils, then lower the heat and let it cook gently for 20-25 minutes, or until the vegetables are soft.

You can also add vegetables if you want. If you choose to add zucchini or green beans, put them in the soup during the final 10 minutes of cooking. This will make sure they are soft but not cooked for too long.

Add salt and pepper to the soup to taste. To make the taste fresher, add the lemon juice right before you serve it.
