Instructions
Bring the oven temperature up to 350°F. Fill a 9×9 inch baking dish with butter and melt it in a preheated oven for three to four minutes, or until it’s completely melted. Take out of the oven.
Combine the flour, baking soda, sugar, and salt in a mixing basin.
To make a smooth batter, whisk in the buttermilk, vanilla, and (if using) lemon essence.
After the butter has melted in the baking dish, pour the batter on top evenly without stirring.
Using a spoon, distribute the lemon curd or pie filling evenly over the batter.
Puff and lightly brown on top after 45 to 55 minutes in the oven.
Take out of the oven and let it cool for a little. As a pudding base, the lemon filling will taste delicious!
Warm the pudding and top it with whipped cream, ice cream, lemon wedges, powdered sugar, or whatever else you choose.
