List of ingredients:
2 tablespoons of olive oil
1 onion of medium size, chopped
2 pieces of garlic, finely chopped
1 pound of ground beef or ground lamb
2 carrots, cut into small pieces.
2 pieces of celery, cut into small pieces
1 cup of peas that are frozen.
1 cup of corn kernels (fresh or frozen)
4 cups of beef broth
2 tablespoons of tomato paste
1 teaspoon of Worcestershire sauce
1 teaspoon of fresh thyme or half a teaspoon of dried thyme.
Add salt and black pepper according to your preference.
1/2 cup of thick cream
4 potatoes of medium size, peeled and cut into small pieces.
Fresh parsley, finely chopped (for decoration)
For the mashed potato topping (if desired):
2 cups of mashed potatoes (you can add a dollop on top if you want).
2 tablespoons of butter
1/4 cup of milk or cream
Add salt and black pepper according to your preference.
Instructions:
Prepare the meat for cooking. In a big pot or a large cooking pot, warm up 1 tablespoon of olive oil on medium heat. Put the minced beef or lamb in the pan, break it into small pieces with a spoon, and cook until it turns brown. Remove extra fat and keep it to the side.
Cook Vegetables in a Pan: In the same pot, put the rest of the olive oil and cook the chopped onion, carrots, and celery until they are soft, for about 5 minutes. Add garlic and cook for one more minute until it smells good.
Include broth and seasonings. Add the tomato paste, Worcestershire sauce, thyme, salt, and black pepper and mix well. Add the beef broth and heat until it starts to bubble.
Include potatoes and meat. Put the chopped potatoes and the cooked meat back in the pot. Cook the soup over low heat for 20-25 minutes, or until the potatoes are soft.
Include cream and vegetables. Add the thick cream, peas, and corn, and cook for 5 more minutes. Taste the food and add more salt, pepper, or other seasonings if necessary.
You can add mashed potatoes on top if you like. To give your Shepherd’s Pie a special twist, you can add a fast mashed potato topping. In a small pot, heat up the mashed potatoes with butter, milk, salt, and pepper. Put a spoonful of mashed potatoes on top of each bowl of soup before serving.
Wait on tables. Pour the soup into bowls, add some fresh parsley, and if desired, a spoonful of mashed potatoes on top.
