Cowboy Soup

This hearty and flavorful Cowboy Soup is a one-pot meal packed with beef, beans, vegetables, and just the right amount of spice. Perfect for feeding a crowd or warming up on a chilly evening!


Ingredients:

  • 1 lb ground beef
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 4 cups beef broth
  • 1 can (15 oz) diced tomatoes, undrained
  • 1 can (15 oz) Rotel tomatoes, undrained (or use diced tomatoes with green chilies)
  • 1 can (15 oz) corn, drained
  • 1 can (15 oz) pinto beans, drained and rinsed
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 2 medium potatoes, peeled and diced
  • 1 teaspoon chili powder
  • 1/2 teaspoon ground cumin
  • Salt and pepper, to taste
  • 1 cup shredded cheddar cheese (optional, for garnish)
  • Green onions or fresh parsley (optional, for garnish)

Directions:

1. Cook the Ground Beef:

  • Heat a large pot or Dutch oven over medium heat.
  • Add the ground beef and cook until browned, breaking it up with a spoon as it cooks.
  • Add the diced onion and minced garlic, and cook until the onion is softened, about 5 minutes. Drain excess fat if necessary.

2. Build the Soup Base:

  • Stir in the beef broth, diced tomatoes, Rotel tomatoes, corn, pinto beans, kidney beans, and diced potatoes.

3. Add the Seasoning:

  • Sprinkle in the chili powder, ground cumin, salt, and pepper. Stir well to combine.

4. Simmer:

  • Bring the soup to a boil, then reduce the heat to low. Cover and let it simmer for 25-30 minutes, or until the potatoes are tender. Stir occasionally.

5. Taste and Adjust:

  • Taste the soup and adjust the seasoning with more salt, pepper, or spices if needed.

6. Serve and Garnish:

  • Ladle the soup into bowls. Garnish with shredded cheddar cheese and green onions or parsley for extra flavor.
