Cheesy Chicken Fritters

Ingredients

For the Fritters:
  • 2 cups cooked chicken , shredded (rotisserie chicken works great!)
  • 1 cup shredded cheese (cheddar, mozzarella, or a blend)
  • 1/2 cup breadcrumbs (panko for extra crispiness)
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup finely chopped onion
  • 1 clove garlic , minced
  • 1 large egg , beaten
  • 1 teaspoon paprika
  • 1 teaspoon dried parsley
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and freshly ground black pepper, to taste
  • 2–3 tablespoons oil (vegetable, olive, or canola) for frying
For Serving:
  • Sour cream, ranch dressing, or marinara sauce (for dipping)

Instructions

Step 1: Prepare the Mixture
  1. In a large mixing bowl, combine the shredded chicken , shredded cheese , breadcrumbs , Parmesan cheese , chopped onion , minced garlic , beaten egg , paprika , parsley , garlic powder , onion powder , salt , and pepper .
  2. Mix everything together until well combined. The mixture should hold together when squeezed; if it’s too dry, add another tablespoon of beaten egg.
Step 2: Shape the Fritters
  1. Scoop about 2 tablespoons of the mixture and shape it into a small patty, about 1/2-inch thick. Repeat with the remaining mixture—you should get about 8–10 fritters .
  2. Optional: Lightly coat the patties in additional breadcrumbs or flour for extra crispiness.
Step 3: Fry the Fritters
  1. Heat 2–3 tablespoons of oil in a large skillet over medium heat.
  2. Carefully place the fritters in the skillet, working in batches to avoid overcrowding. Fry for 3–4 minutes per side , or until golden brown and crispy.
  3. Transfer the cooked fritters to a plate lined with paper towels to drain excess oil.
Step 4: Serve and Enjoy
  1. Serve the fritters warm with your favorite dipping sauce, such as sour cream, ranch, or marinara.
  2. Garnish with fresh parsley or grated Parmesan if desired.

Tips and Variations

  • Add Veggies: Stir in finely chopped spinach, bell peppers, or zucchini for added nutrition and flavor.
  • Spice It Up: Add a pinch of red pepper flakes or cayenne pepper for a spicy kick.
  • Baked Option: For a healthier version, bake the fritters on a greased baking sheet at 400°F (200°C) for 15–20 minutes , flipping halfway through, until golden and crispy.
  • Gluten-Free Option: Use gluten-free breadcrumbs and ensure all other ingredients are gluten-free.
  • Make Ahead: Prepare the mixture ahead of time and refrigerate for up to 1 day before shaping and cooking.
